Potatoes are the only crockpot dish where the answer depends more on how full the pot is than on what setting you chose. A half-full pot of potatoes and a packed one are two different recipes, and almost nobody says which one they wrote.
Quick answer: Three pounds of potatoes in a 6-quart pot, filled a little over halfway, take LOW 4 hours or HIGH 2 for mashed and cheesy dishes, and LOW 5 for scalloped, where the slices sit in a sauce. Pack the same pot to the brim with five pounds and add two hours. Cut every piece to the same size or the timing means nothing.
4-quart slow cooker
Every time on this page assumes a pot filled a little over halfway. For one side dish serving four, a 4-quart pot hits that line where a 6-quart leaves it half empty and cooking unevenly. It is also the second pot that makes a full Sunday dinner possible.
In the budget-dinner set we measured this month, the LOW times quoted ran from two hours to eight, with a median of five, and only two pages in ten said what size pot they were using. For meat that vagueness is annoying. For potatoes it is the whole problem, because a potato does not tell you it is nearly done: it is hard, then it is hard, then it collapses.
Why the Fill Line Decides the Time
A slow cooker heats through its walls and base. The heat then has to travel inward through whatever is in the pot, and dense raw potato conducts slowly.
So the same 6-quart pot behaves as three different appliances:
- Under half full. Fast and risky. The layer is thin, the edges cook well ahead of the middle, and the exposed tops dry out. Two to three hours on LOW, checked early.
- A little over half, around three pounds. The band everything here is timed for. Four hours on LOW, even heat, no stirring needed.
- Filled to the brim, five pounds or more. Six hours on LOW, and the centre is still the last thing to soften. Stir once at the halfway point, which is the only way to move the middle outwards.
How full the pot is changes the time more than LOW versus HIGH does. A recipe that never says its pot size has not told you the recipe.
Below the halfway line, use a smaller pot if you have one: a 4-quart pot with the same three pounds cooks more evenly than a 6-quart pot with one and a half.

Scalloped is the line that needs a tool rather than care: 3mm by eye is guesswork, and an adjustable mandoline gives every slice the same thickness in one pass. Even sizing matters more than any of these numbers: a tray of pieces ranging from walnut to fist gives you a pot with mush at one end and raw at the other, whatever the clock says.

Slow-cooked potatoes hold more water than boiled and drained ones, because nothing pours off and nothing evaporates. That extra water is what makes crockpot mash gluey when it is treated like ordinary mash.
What to do differently:
- Use half a cup of stock, not a full pot of water. The potatoes steam rather than boil. Anything more and you are draining at the end, which defeats the point.
- Mash with a hand masher, never a stick blender. A blender bursts the starch cells and the result is wallpaper paste within seconds. This is true of oven-boiled mash too, and doubly true here.
- Warm the butter and milk before they go in. Cold dairy hitting hot potato tightens the starch and the mash stiffens.
- Add dairy after mashing, off the heat. Cream held on LOW for the last hour separates.
The masher is the part worth owning rather than improvising — a fork leaves lumps and a blender leaves glue, so a stiff wire masher is the only tool that works straight in the ceramic insert.
Russets and other floury potatoes mash smoothest. Waxy potatoes hold their shape, which is what you want for cheesy or scalloped dishes and exactly what you do not want in mash.

A pot of potatoes will hold on warm for around two hours, longer than most crockpot dishes, because there is no protein to dry out. Two things still go wrong in that window.
The tops darken where they meet the air, which a stir fixes in a second. And cheese on top keeps cooking, so a cheesy potato dish left on warm for two hours has a rubbery lid on it. Put the cheese on for the last twenty minutes rather than at the start, and the dish holds looking like it was just made.

Trimmed beans, chopped bacon, a splash of stock. Longer than three hours and they go olive-coloured and soft, so this is one to start after the potatoes.
Crockpot stuffing, LOW 4 h
Cubed bread, sautéed onion and celery, stock and herbs. The one side here that wants a pan first, since raw onion in bread stays sharp.
Sweet potato casserole, LOW 3.5 h
Cubed sweet potato with a little butter and cinnamon; topping added in the last half hour so it does not go soggy.
Corn, creamed in the pot, LOW 3 h
Frozen sweetcorn, butter, cream cheese. Nothing else, and it needs no attention at all.

Two Pots or One
Thanksgiving and Sunday dinners are where this whole category earns its place, and the practical question is whether sides can share a pot. Mostly they cannot: green beans at three hours and scalloped potatoes at five want different windows, and stacking them means the beans are dead before the potatoes are done.
What does work is one pot on a staggered start, adding the fast side to a wide gap on top of the slow one for its final hours. What works better is a second small pot, since a 4-quart is the right size for a single side and frees the big one for the potatoes.
If that second pot ends up holding the main rather than another side, crockpot meatballs are the least demanding thing to put in it: frozen ones need LOW 2–3 hours, and after that they sit on warm for about three hours before the sauce tightens.
Your Pot Is Probably Hotter Than the Recipe Assumes
Newer slow cookers run hotter on LOW than the ones most side-dish recipes were written on, and potatoes at the edge of a hot pot go brown and papery.
Test yours once: fill it halfway with water, lid on, LOW for four hours, then read the temperature with an instant-read thermometer. Around 190°F is normal. Over 205°F and take an hour off every time above, and stir a full pot at the halfway mark rather than leaving it alone.
