A casserole in the crockpot can go two ways. It comes out in firm, cheesy layers you can scoop, or it turns watery on top and mushy underneath. The recipe matters less than the base under it: raw potatoes, tater tots, cooked rice, or meat that is already done. Each needs different hours on low, and each needs the cheese, pasta, and crunch added at a different point.
Below are 10 crockpot casserole recipes for dinner, from ground beef to chicken to one healthy pick, each with its hours on LOW and HIGH and a full recipe card. They sit next to our easy crockpot dinners and cheap dinners for a family.
Quick answer
Cook a crockpot casserole 4 to 6 hours on LOW, put the densest layer on the bottom, and add cheese only in the last 15 to 30 minutes.
Most crockpot casseroles cook 4–6 hours on LOW or 2–4 hours on HIGH. Raw sliced potatoes take the longest, up to 8 hours on LOW; casseroles built on cooked meat and vegetables are done in 2–3. Do not stir, and keep the lid closed.
What is a crockpot casserole?
A crockpot casserole is a layered dinner cooked slowly in a slow cooker instead of baked in a 9×13 dish: meat, a starch, vegetables, and a sauce, left alone until the slowest layer is tender. It differs from a stew because it is layered and scooped out holding its shape.
The recipes below fit a 6-quart slow cooker and feed six. Each one names its base, because the base decides the hours.

How long does a casserole take in a crockpot?
A slow cooker casserole takes as long as its slowest layer. Cheese melts in minutes and browned beef is already safe to eat, but a raw potato slice needs hours of steady heat before a knife goes through it.
- Cooked meat and vegetables: 2–3 h; 1.5–2 h; Pizza, King Ranch, stuffed pepper.
- Frozen hash browns or tots: 4–5 h; 2–3 h; Taco, John Wayne, hashbrown hamburger.
- Raw potatoes or raw rice: 4–6 h, up to 8 for thick root vegetables; 3–4 h; Cowboy, chicken and rice.
- Raw chicken: 6–8 h; 3–4 h; Stuffing, noodle.
- Eggs (breakfast casseroles): 4–6 h; 2–3 h; Until the center is set.
The Base Method: Layer It, Do Not Stir It
Every recipe here follows the same moves. They keep the bottom from scorching, the top from going watery, and the pasta from turning to paste.
A crockpot casserole is done when its slowest layer is done. Build it so the slowest layer sits on the bottom, and keep everything that cooks in minutes for the end.
1. Grease the insert
Cheese and potatoes stick to a bare stoneware insert and burn at the edges on a long cook. Spray it with cooking spray, rub it with butter, or use a slow cooker liner.
2. Brown the beef and drain it
Ground beef browned in a skillet adds flavor, and draining the fat keeps a greasy layer off the top of the casserole. This is the one pan you wash for most of these ground beef casserole recipes for dinner.
3. Densest layer on the bottom
Raw potatoes and onions go on the bottom, where the heat comes from and where the liquid collects. Meat sits over them, sauce goes on top.
Pin it4. Do not stir
Once the layers are in, leave them. Stirring breaks the potatoes, mixes raw layers into cooked ones, and turns a casserole into a stew.
5. Add only the liquid the recipe calls for
A slow cooker loses very little moisture: the steam hits the lid and drips back in. That is why condensed soups carry most of these sauces.
7. Pasta and rice go in cooked, or late
Dry pasta and raw rice left in for hours soak up the sauce and fall apart. Cook them separately, a few minutes short of done, and stir them in at the end.
8. Cheese and dairy go in last
Add cheese, sour cream, and cream cheese in the final 15–30 minutes. Added at the start, dairy separates and scorches on the edges.
Pin it1. Crockpot Cowboy Casserole
The crockpot cowboy casserole is the one people search for most right now, and it is the best first casserole to make: ground beef, potatoes, corn, and cheese from one pot. It is also the one that fails most often, always for the same reason.
The creamy soup and sour cream go over the top as a lid of sauce. Do not stir them in.
Crockpot Cowboy Casserole
Course: Main CourseDifficulty: Easy6

hoursThin potatoes on the bottom, seasoned ground beef, corn, and a creamy sauce, with cheddar melted on at the end.
Ingredients
1 lb ground beef
1 small onion, diced
1½ lb russet or baby red potatoes, sliced ⅛ inch thin
1 cup frozen corn
1 can (10.5 oz) condensed cream of chicken soup
½ cup sour cream
1 tsp garlic powder
1 tsp smoked paprika
salt and pepper
1½ cups shredded cheddar
Cooking spray for the insert
Salt and black pepper to taste
Chopped fresh parsley to finish
Pickled red onions to serve
Directions
- Gather and measure everything before you start, so nothing waits on the counter.
- Spray the crock pot insert.
- Brown the beef with the onion in a skillet and drain the fat.
- Lay the potato slices over the bottom in overlapping layers and season them.
- Spread the beef and corn over the potatoes.
- Stir the soup, sour cream, and spices together and spread over the top. Do not stir.
- Cook 6–7 hours on LOW or 3–4 hours on HIGH, until a knife slides through the potatoes.
- Scatter the cheddar on top, cover, and let it melt 5–10 minutes.
- Test a potato slice with a knife; if it resists, give it another 30 minutes on HIGH with the lid closed.
- Let the casserole rest 10 minutes with the lid off so the layers set.
- Scoop with a wide spoon straight down to the bottom, so each serving has every layer.
- Cool leftovers within 2 hours and refrigerate in shallow containers for up to 4 days.
Notes
- Thick potato slices stay hard. Use a mandoline or a sharp knife and keep them at ⅛ inch.
Syntus slow cooker liners

Urbanstrive box grater with container

2. Crockpot Taco Casserole
The crockpot taco casserole is the true dump and go recipe of the set. Frozen hash browns go in straight from the bag, there is no chopping, and it is done in 4 hours on LOW.
The one thing that ruins it is liquid. Drain the Rotel and rinse the beans, or the bottom of the pot turns to soup.
Variation: cheesy hashbrown hamburger. Swap the taco seasoning for garlic powder, use diced hash browns, and mix the cheese in two halves: half in a sour cream and soup sauce, half on top at the end. Diced frozen potatoes hold their shape better than shredded over 5 hours, so it cooks 5 hours on LOW or 2½–3 on HIGH and forgives an extra hour on warm. Serve it with steamed green beans. hoursFrozen hash browns under taco-seasoned beef, Rotel, and cheese sauce: the fastest dump and go casserole here.
Ingredients
1 lb ground beef
1 packet taco seasoning
1 bag (30 oz) frozen shredded hash browns
1 can (10 oz) Rotel diced tomatoes and green chiles, drained
1 can (15 oz) black beans, drained and rinsed
1 can (10.5 oz) condensed cheddar cheese soup
½ cup milk
1 cup shredded Mexican-blend cheese
Sour cream, sliced green onion, and crushed tortilla chips to serve
Salt to taste, only after tasting
Chopped fresh cilantro to finish
Lime wedges to serve
Directions
- Gather and measure everything before you start, so nothing waits on the counter.
- Brown the beef, drain the fat, and stir in the taco seasoning.
- Spread the hash browns over the bottom of the greased insert.
- Layer the beef, beans, and drained Rotel on top.
- Whisk the cheese soup with the milk and pour it over. Do not stir.
- Cook 4 hours on LOW.
- Top with the cheese, cover 10 minutes, and serve with the chips, sour cream, and green onion.
- Check that the hash browns at the edge are soft and the sauce is bubbling, not watery.
- Let the casserole rest 10 minutes with the lid off so the layers set.
- Scoop with a wide spoon straight down to the bottom, so each serving has every layer.
- Cool leftovers within 2 hours and refrigerate in shallow containers for up to 4 days.
Notes
- Drain the Rotel and the beans. Their liquid is what makes a taco casserole watery.
3. John Wayne Casserole (Crockpot Tater Tot Casserole)
This is the crockpot tater tot casserole most people grew up with: seasoned beef with peppers and onions, a creamy layer, and a roof of tater tots. The tots go on frozen and in one flat layer, so they cook through without breaking.
The tots will not crisp under a lid; steam is the whole point of a slow cooker. The fix is a second round of cheese at the end with the lid off, or a few minutes under the broiler if your insert is oven-safe.

1 packet taco seasoning
1 can (10 oz) Rotel, drained
1 can (10.5 oz) condensed cream of mushroom soup
½ cup sour cream
2 cups shredded cheddar, divided
1 bag (32 oz) frozen tater tots
Salt and black pepper to taste
Pickled jalapeño slices to serve
Chopped fresh parsley to finish
Directions
- Gather and measure everything before you start, so nothing waits on the counter.
- Brown the beef with the onion and pepper, drain, and stir in the seasoning and Rotel.
- Spread the beef in the greased insert.
- Mix the soup and sour cream, spread it over the beef, and scatter 1 cup of cheese on top.
- Arrange the frozen tater tots over everything in one layer.
- Cook 4½ hours on LOW.
- Top with the remaining cheese and cook uncovered 10–15 minutes.
- Check that the tots are hot all the way through and the beef layer is bubbling at the edges.
- Let the casserole rest 10 minutes with the lid off so the layers set.
- Scoop with a wide spoon straight down to the bottom, so each serving has every layer.
- Cool leftovers within 2 hours and refrigerate in shallow containers for up to 4 days.
Notes
- The tots soften under the lid. For a crisp top, finish the insert under the broiler for 3 minutes if it is oven-safe.
4. Crockpot Pizza Casserole
A crockpot pizza casserole is where the pasta rule matters most. Dry pasta left in marinara for hours drinks the sauce and turns to paste, and the top layer dries into hard edges.
Kids pick this one. Swap the sausage for ground beef or leave it meatless with mushrooms and olives. Serve with: garlic bread and a green salad. More pasta dishes are in these crockpot pasta recipes.
Crockpot Pizza Casserole

hoursPasta, sausage, pepperoni, and marinara with mozzarella on top; the pasta goes in cooked so it does not turn to paste.
Ingredients
12 oz rigatoni or penne, cooked 3 minutes less than the package says
1 lb Italian sausage, browned and drained
1 jar (24 oz) marinara
1 cup pepperoni slices
1 green bell pepper and ½ onion, diced
1 tsp Italian seasoning
2 cups shredded mozzarella
Salt and black pepper to taste
Fresh basil leaves to finish
Red pepper flakes to serve
Directions
- Gather and measure everything before you start, so nothing waits on the counter.
- Brown the sausage with the pepper and onion and drain.
- Stir the sausage, marinara, half the pepperoni, and the seasoning together in the insert.
- Cook 2–3 hours on LOW.
- Fold in the drained pasta.
- Top with the mozzarella and the rest of the pepperoni and cook 15–20 minutes, until the cheese melts.
- Check that the cheese has melted into a blanket and the pasta is tender but still holds its shape.
- Let the casserole rest 10 minutes with the lid off so the layers set.
- Scoop with a wide spoon straight down to the bottom, so each serving has every layer.
- Cool leftovers within 2 hours and refrigerate in shallow containers for up to 4 days.
Notes
- Undercook the pasta. It keeps soaking up sauce in the pot.
5. Crockpot Chicken Enchilada Casserole
The crockpot chicken enchilada casserole layers corn tortillas like lasagna noodles, so there is no rolling. It starts with sauce on the bottom so the first tortilla layer does not stick and scorch.
Use leftover or rotisserie chicken. The cheese here goes inside the layers, where sauce covers it, plus a last handful on top. Serve with: rice, avocado, and lime wedges.
Variation: King Ranch chicken. Use two creamy soups, a can of drained Rotel, chili powder and cumin in place of the enchilada sauce, and layer the tortillas torn rather than quartered. Soften the onion and pepper in a skillet first, because raw they release water and stay sharp.

Directions
- Gather and measure everything before you start, so nothing waits on the counter.
- Spoon a thin layer of sauce over the bottom of the greased insert.
- Layer a third of the tortillas, then chicken, beans, corn, chiles, sauce, and a handful of cheese.
- Repeat twice, ending with tortillas and sauce.
- Cook 4 hours on LOW.
- Top with the remaining cheese, cover 10 minutes, and serve with sour cream.
- Check that the sauce has soaked into the tortillas and the edges are bubbling.
- Let the casserole rest 10 minutes with the lid off so the layers set.
- Scoop with a wide spoon straight down to the bottom, so each serving has every layer.
- Cool leftovers within 2 hours and refrigerate in shallow containers for up to 4 days.
Notes
- Corn tortillas hold together; flour tortillas go gummy.
6. Chicken and Stuffing Casserole
Of the chicken casserole recipes for dinner here, this is the one with the longest window: 6–8 hours on LOW, which fits a full workday. Raw chicken breasts go on the bottom, covered by a creamy sauce, and the stuffing mix goes on top, moistened with broth and butter.
Chicken breast is lean, so it dries out once it passes 165°F. Check it at the short end of the time, and use thighs if you know you will be gone longer.

- Lay the chicken in the greased insert and scatter the green beans around it.
- Mix the soup and sour cream and spread it over the chicken.
- Toss the stuffing mix with the broth and butter and spoon it over the top.
- Cook 6–8 hours on LOW or 3–4 hours on HIGH, until the chicken reads 165°F.
- Leave it uncovered for the last 15 minutes to dry the stuffing a little.
- Check the thickest piece of chicken with a thermometer; it should read 165°F and no more.
- Let the casserole rest 10 minutes with the lid off so the layers set.
- Scoop with a wide spoon straight down to the bottom, so each serving has every layer.
- Cool leftovers within 2 hours and refrigerate in shallow containers for up to 4 days.
Notes
- Chicken breasts dry out past 165°F. Check at the short end of the time.
7. Chicken, Broccoli and Rice Casserole
Potatoes and onion go on the bottom, chicken on top of them, and the sauce over everything. The rice is already cooked and goes in at the end with the broccoli, which is why this casserole does not turn to mush.
Thighs stay juicy through 6 hours. Broccoli added at the start would turn olive green and soft; for the last 30 minutes it stays bright. Serve with: warm rolls. More ideas are in these chicken crockpot recipes.

- Scoop with a wide spoon straight down to the bottom, so each serving has every layer.
- Cool leftovers within 2 hours and refrigerate in shallow containers for up to 4 days.
Notes
- Broccoli added at the start turns olive green and soft. It goes in with the rice.
8. Chicken Noodle Casserole
This is the one recipe where uncooked pasta belongs in the pot. The chicken cooks in the sauce and broth on LOW.
Egg noodles cook faster than dried pasta shapes. If you swap in penne, cook it separately and stir it in at the end.

- Let the casserole rest 10 minutes with the lid off so the layers set.
- Scoop with a wide spoon straight down to the bottom, so each serving has every layer.
- Cool leftovers within 2 hours and refrigerate in shallow containers for up to 4 days.
Notes
- This is the one recipe where the noodles go in uncooked. The broth is measured for them.
9. Stuffed Pepper Casserole
Everything from a stuffed pepper, without hollowing and filling a single one. Chopped peppers cook down with lean beef and tomatoes, and the cooked rice goes in at the end.
Leave the tomatoes undrained here. The rice absorbs that liquid in the last 15 minutes. Serve with: crusty bread. For more lighter dinners, see these healthy crockpot recipes.

- Cool leftovers within 2 hours and refrigerate in shallow containers for up to 4 days.
Notes
- Lean beef and no cream soup make this the high-protein pick. Use cooked brown rice for more fiber.
10. Healthy Chicken Zucchini Casserole
One of the healthy casserole recipes for dinner that does not lean on canned soup or pasta: chicken, tomatoes, garlic, and zucchini with a little cheese. Zucchini is mostly water.
It is also gluten-free as written. Leave the lid off for the last 10 minutes to let some steam out. Serve with: quinoa, brown rice, or a big salad.

- Cool leftovers within 2 hours and refrigerate in shallow containers for up to 4 days.
Notes
- Zucchini is mostly water. Added at the start, it floods the pot. It goes in for the last half hour.
If it goes wrong: how to fix a watery or mushy crockpot casserole
Almost every failed slow cooker casserole is one of two problems, and both come from the lid. A slow cooker keeps nearly all its moisture, so water that would bake off in the oven stays in the pot.
Watery on top. Too much liquid went in, or something leaked it: undrained beans, Rotel, frozen vegetables, zucchini added early. Fix it now by taking the lid off for the last 30 minutes on HIGH.
Pin itMushy underneath. Pasta or rice went in raw and cooked too long, potatoes were cut too thin and stirred, or the whole pot was stirred. Keep pasta and rice for the end, keep the layers still, and use the short end of the time the first time you make a recipe in your pot.
Burned at the edges. Dairy went in too early or the insert was bare. Grease it, and hold the cheese until the last 15–30 minutes.
Potatoes still hard. Slices thicker than ⅛ inch, or potatoes on top instead of the bottom. Give it another hour on HIGH with the lid closed.
Dry chicken. Breasts past 165°F. Use thighs, or check at the short end of the time.
Oven Casserole to Crockpot: What Crosses Over and What Does Not
Can you bake a casserole in a crockpot? Most family oven casseroles convert. Change three things: the liquid, the time, and the order.
Cut the liquid by a third. An oven evaporates water; a slow cooker keeps it. Reduce the broth, milk, or water by about a third, and by up to half for a very saucy recipe. Rice and pasta absorb liquid, so if they go in with it, reduce it less.
- 15–30 minutes: 4–6 h; 1½–2½ h.
- 35–45 minutes: 6–10 h; 3–4 h.
- 1 hour at 350°F: 8–10 h; 4–6 h.
What crosses over: layered potato and beef casseroles, tortilla casseroles, chicken in a creamy sauce, anything with a condensed soup base.
What does not: casseroles built on a crisp top, like breadcrumb or biscuit crusts; delicate fish; anything that relies on a short bake to set, like a baked pasta with no sauce. Pasta and rice stay out until the end. A crunchy topping goes on in the last 5–15 minutes with the lid off, or skip the pot and use the Instant Pot for a short-cook dish.
Pin itStoring, Reheating, and Freezing Crockpot Casseroles
Get leftovers into the fridge within 2 hours of cooking. Scoop them out of the stoneware into shallow containers, because a full insert holds heat for hours and cools too slowly. They keep 3–4 days in the fridge.
Reheat single portions in the microwave, or a larger amount in a covered dish in the oven, until hot all the way through, 165°F in the center. Do not reheat leftovers in the slow cooker; it warms them too slowly.
To freeze, cool the casserole, pack it in freezer containers, and use it within 3–4 months for best quality. Beef and potato, enchilada, King Ranch, and stuffed pepper casseroles freeze well. Casseroles with pasta or a lot of sour cream get softer and grainier after freezing. More make-ahead ideas are in these crockpot freezer meals.

Key takeaways
- Most casseroles take 4–6 hours on LOW; raw potatoes take up to 8.
- The densest layer goes on the bottom and nothing gets stirred.
- Cheese and dairy go in for the last 15–30 minutes.
- Drain canned beans and Rotel, or the pot turns watery.
- Pasta and rice go in cooked, or late.
- Brown ground beef first and never start with frozen meat.
When the free version isn’t enough
A recipe gives you the order of the layers, but it cannot tell you how hot your particular slow cooker runs. If the first casserole comes out watery or hard in the middle, shorten or lengthen the time by an hour on the next one, and see our healthy crockpot recipes, Instant Pot recipes and chicken crockpot recipes for dishes with a shorter clock.
Common questions
Can you cook a casserole in 2 hours?
Yes, if everything in it is already cooked. A casserole of cooked meat and vegetables is done in 1.5–2 hours on HIGH. Raw potatoes and raw chicken need longer.
How do I cook a casserole in a slow cooker?
Grease the insert, brown and drain the meat, put the densest layer on the bottom, pour the sauce over the top, and do not stir. Keep the lid closed, and add cheese in the last 15–30 minutes.
Why is my crockpot casserole watery?
The lid keeps the moisture in. Drain canned beans and tomatoes, use condensed soups, add only the liquid the recipe asks for, and cook the last 30 minutes with the lid off if it is already too wet.
Can I put uncooked pasta in a slow cooker casserole?
Only if the recipe is built for it, like the chicken noodle casserole, where dry noodles cook in measured broth for the last 30 minutes on HIGH. Otherwise, cook the pasta separately and stir it in at the end.
Can I put raw ground beef in a slow cooker casserole?
Brown it first. Browning gets it past 160°F before it goes under the layers, and draining the fat keeps the casserole from turning greasy.
How do I keep chicken from drying out in a slow cooker casserole?
Use thighs, keep the chicken under the sauce, and check breasts at the short end of the time. Chicken is done at 165°F; past that, breasts dry out fast.
What can I use instead of canned cream soup?
Tomato-based sauces, like in the stuffed pepper and zucchini casseroles, or a sauce of broth thickened with cornstarch and finished with sour cream or cream cheese in the last 30 minutes.
Can I make a casserole ahead and cook it later?
Yes. Layer it in the insert the night before, cover it, and keep it in the fridge. Brown the meat first and keep the cheese in a separate container. Start it on LOW the next morning and expect an extra 30 minutes, since the insert starts cold.
What are the best casserole recipes for dinner?
The cowboy casserole is the best first pick for ground beef, the chicken enchilada for rotisserie chicken, and the chicken zucchini or stuffed pepper for something lighter.
