For a first try, start with a thigh recipe such as 1, 7 or 20. Thighs forgive extra hours, while lean breasts and roasts need the shorter time on each card.
1. Creamy Chicken and Wild Rice Soup
This is the baseline soup of the page: thighs instead of breasts, so the meat stays juicy for the full 7 to 8 hours. Rice goes in raw and soaks up the broth, which is why the soup thickens on its own.
The catch is the dairy. Add the cream cheese, milk and half and half only in the last 30 minutes, or the soup can split. Serve it next to a loaf and a salad, or follow it with the crockpot soup recipes on this site.

hoursChicken thighs, carrots, celery and a wild rice mix simmer in broth, then cream cheese, milk and half and half make it velvety at the end. A cozy first soup for a busy weeknight.
Ingredients
2 tablespoons butter
1 cup chopped onion
1 1/2 cups diced carrots
1 1/2 cups diced celery
3 1/2 cups chicken broth
2 lb boneless skinless chicken thighs
1 package (6 ounces) long grain and wild rice mix
2 teaspoons salt
3/4 teaspoon black pepper
1 dash red pepper flakes
1 teaspoon dried parsley
3 tablespoons cornstarch, mixed with 4 tablespoons cold water
4 ounces cream cheese, cubed
1 cup milk
1 cup half and half
Directions
- Melt the butter in a skillet and soften the onion, carrots and celery until the onion looks glossy. This step is optional, but it deepens the flavor.
- Put the vegetables in the slow cooker and pour in the chicken broth. Nestle the chicken thighs in the liquid.
- Sprinkle the rice mix with its seasoning packet if it has one, then add the salt, black pepper, red pepper flakes and parsley. Stir once so the rice sits under the broth.
- Cover and cook on LOW for 7 to 8 hours or on HIGH for 3 to 4 hours. Keep the lid closed, because every peek adds about 15 minutes.
- Lift out the thighs and check that the thickest one reads 165°F. Shred the meat with two forks.
- Whisk the cornstarch and cold water together until smooth. Stir it into the pot and let it cook uncovered for a few minutes until the broth coats a spoon.
- Add the cream cheese, milk and half and half in the last 30 minutes. Stir until the cheese melts and no white streaks remain.
- Return the shredded chicken to the pot and taste for salt. The rice should be tender, with a slight bite from the wild grains.
Notes
- Use oat milk and a dairy-free cream cheese for a dairy-free bowl. The soup thickens as it sits, so thin leftovers with a splash of broth. It keeps 3 to 4 days in the fridge and freezes well without the dairy added.
2. Zuppa Toscana Soup
Zuppa Toscana is the comfort food soup for people who want something more filling than a brothy soup. Sausage and bacon do the seasoning work, so you need very little else.
Brown the sausage first, then drain it, or the soup turns greasy. Kale and cream go in last, which keeps the leaves green and the broth from curdling. It feeds eight, so it also sits on the list of cheap dinners for a family.
8

hoursItalian sausage, bacon, Yukon gold potatoes and kale in a creamy broth, just like the restaurant favorite. Cream goes in at the end so the soup stays smooth.
Ingredients
1/2 lb bacon, chopped
1 lb mild Italian sausage
1 large onion, diced
2 tablespoons minced garlic
1/2 teaspoon sea salt
1/4 teaspoon black pepper
3 lb Yukon gold potatoes, cut into 1-inch cubes
4 cups chopped kale, stems removed
32 ounces chicken broth
1 cup heavy whipping cream
1/8 to 1/4 teaspoon cayenne pepper, optional
Extra crumbled bacon and grated Parmesan, for garnish
Directions
- Cook the bacon in a skillet until crisp, then move it to a paper towel. Save a spoonful of the fat if you like extra flavor.
- Brown the Italian sausage in the same skillet, breaking it into small pieces. Drain it well so the soup does not turn greasy.
- Put the sausage, onion, garlic, salt, pepper and potatoes in the slow cooker. Pour in the chicken broth.
- Cover and cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours. The potatoes are done when a cube breaks under a fork.
- Stir the kale into the hot soup and let it wilt for about 10 minutes. It should turn bright green and soften.
- Pour in the heavy cream and the cayenne if you want heat. Stir gently and warm it through without boiling.
- Press a few potato cubes against the side of the pot with a soup ladle if you want a thicker broth. Taste and adjust the salt.
- Ladle into bowls and top with the crisp bacon and Parmesan. Serve right away.
Notes
- Spicy sausage turns up the heat, so skip the cayenne if you use it. Keep the garnishes separate so leftover soup stays creamy. The soup keeps about 3 days in the fridge, and the potatoes go soft if you freeze it.
3. Loaded Baked Potato Soup
This soup works because the potatoes break down and thicken it for you. Mash them right in the pot and leave some chunks for texture.
The cream and cheese go in at the end, never at the start. A pot cooked for 8 hours with dairy can look grainy. If you want more potato ideas, see crockpot potatoes.
6
servings10
minutes4
hoursRusset potatoes cook soft in chicken broth, then a butter and flour base and cream turn them into a thick soup. Bacon, cheese, sour cream and scallions go on top.
Ingredients
4 cups russet potatoes, peeled and cubed
4 cups chicken broth
1/2 cup diced onion
1/2 tablespoon salt
1/2 tablespoon black pepper
4 tablespoons butter
1/4 cup all-purpose flour
1 1/2 cups heavy cream
8 slices bacon, cooked and crumbled
1 cup shredded cheese
1/3 cup sliced scallions
1 cup sour cream
Directions
- Put the potatoes, onion, chicken broth, salt and pepper in the slow cooker. Stir once.
- Cover and cook on LOW for 7 to 8 hours or on HIGH for 4 or more hours. The potatoes are ready when they fall apart at a touch.
- Melt the butter in a saucepan and whisk in the flour. Cook for a minute, then whisk in the heavy cream until smooth.
- Stir the cream mixture into the slow cooker. Leave the lid off for 15 to 20 minutes so the soup can thicken.
- Mash the potatoes with a potato masher until about half of them are smooth. Leave the rest in small chunks.
- Stir in the sour cream and half of the shredded cheese. Stop when the cheese melts.
- Cook the bacon on the stove while the soup finishes, then crumble it. Keep it crisp by adding it only at serving.
- Ladle into bowls and top with the rest of the cheese, bacon and scallions.
Notes
- Half and half works in place of cream for a lighter pot. Thin leftovers with a splash of broth when you reheat. The soup keeps 3 to 4 days in the fridge, and potato soup does not freeze well.
4. Slow Cooker Beef Chili
This is the classic beef chili of the page: ground beef, beans, tomatoes and a spice mix you can taste. It is the one to pick when you need a big pot that holds well for hours.
Brown and drain the beef before it goes in, or the pot turns greasy. For a different style of chili, compare it with Cincinnati chili over spaghetti or the longer chili recipe for the crockpot.
10
servings15
minutes4
hoursLean ground beef, kidney beans and three kinds of tomatoes simmer with chili powder, cumin and smoked paprika. Beer adds depth, and the bowl takes any topping you like.
Ingredients
3 lb lean ground beef
2 onions, chopped
4 cloves garlic, minced
12 ounces light beer
2 cans (15 ounces each) kidney beans, drained
1 can (28 ounces) whole tomatoes
1 can (14 ounces) diced tomatoes
1 can (14 ounces) tomato sauce
1 green bell pepper, chopped
4 tablespoons chili powder
1 tablespoon cumin
2 teaspoons dried parsley
1 teaspoon smoked paprika
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon oregano
Directions
- Brown the ground beef with the onions in a large skillet until no pink remains. Drain the fat, which keeps the chili from tasting greasy.
- Chop the onions, garlic and bell pepper while the beef browns. A vegetable chopper makes quick work of the pepper and onions.
- Put the beef, onions, garlic and bell pepper in the slow cooker. Add the beer, beans, all three tomato products and the tomatoes’ juices.
- Break up the whole tomatoes with a spoon, then stir in the chili powder, cumin, parsley, smoked paprika, salt, pepper and oregano.
- Cover and cook on LOW for 7 to 8 hours or on HIGH for 4 or more hours. Do not lift the lid for the first few hours.
- Taste after the cooking time and add salt a pinch at a time. Chili often needs more than you expect.
- If the chili looks thin, cook it with the lid off for the last 30 minutes. It should coat the back of a spoon.
- Serve with shredded cheese, sour cream, chives or parsley.
Notes
- Swap the beer for beef broth if you prefer. Add pinto beans if you want a bean-heavy pot. Chili tastes better the next day and freezes well for up to 3 months.
5. White Chicken Chili
White chicken chili is the lighter pick when beef chili feels too heavy. It is a pantry meal: beans, corn, green chiles and broth, plus a lb of chicken.
Shred the chicken and put it back before the cream cheese goes in, which keeps the meat moist. We have a whole page on crockpot white chicken chili if you want more versions.
8

hoursChicken breasts, great Northern beans, corn and green chiles cook in broth with cumin and oregano. Cream cheese and half and half make it creamy at the end.
Ingredients
1 onion, diced
3 cloves garlic, minced
24 ounces low sodium chicken broth
2 cans (15 ounces each) great Northern beans, drained
2 cans (4.5 ounces each) diced green chiles
1 can (15 ounces) corn, drained
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons cumin
1/2 teaspoon oregano
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
4 ounces cream cheese, softened
1/2 cup half and half
Directions
- Put the chicken in the bottom of the slow cooker and scatter the onion and garlic around it. Pour in the broth.
- Add the beans, green chiles and corn. Stir in the salt, pepper, cumin, oregano, chili powder and cayenne.
- Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours or a bit longer. Keep the lid closed.
- Check that the thickest piece of chicken reads 165°F. Move it to a board.
- Shred the chicken with two forks and stir it back into the pot.
- Add the softened cream cheese and the half and half. Stir until the cheese melts and the chili looks creamy.
- Cook for another 15 to 20 minutes so the flavors blend. Taste and add salt if needed.
- Ladle into soup bowls and top with cilantro, avocado or crushed tortilla chips.
Notes
- Mash a half cup of the beans against the side of the pot for a thicker chili. Chicken thighs work too and are harder to dry out. Leftovers keep 3 to 4 days and freeze well for up to 3 months.
6. Crock Pot Lasagna Soup
Lasagna soup gives you the layers in a spoon. It is the one to pick when the family wants pasta but you do not want a casserole dish to wash.
The noodles go in last, for the final 30 to 45 minutes, or they turn to mush. If pasta is your thing, the crockpot pasta recipes page has more, and the ground beef pasta version shows the same late-noodle trick.
8
servings15
minutes6
hoursGround beef, red bell pepper, tomatoes and broth simmer all day, then broken lasagna sheets cook in the pot. Ricotta, mozzarella and Parmesan finish the bowl.
Ingredients
1 lb lean ground beef
1 onion, diced
1 red bell pepper, diced
2 celery ribs, diced
4 garlic cloves, minced
3 cups beef broth
3 cups passata or crushed tomatoes
2 cans (15 ounces each) diced tomatoes
1 1/2 teaspoons Italian seasoning
1 tablespoon red wine vinegar
8 to 10 lasagna sheets, broken into pieces
1 cup ricotta cheese
1 cup shredded mozzarella, grated on a box grater
1/2 cup grated Parmesan
Fresh basil, for garnish
Directions
- Brown the ground beef in a skillet until no pink remains, then drain it. Use a spoon to break it into small crumbles.
- Put the beef, onion, bell pepper, celery and garlic in the slow cooker. Pour in the beef broth, passata and diced tomatoes.
- Stir in the Italian seasoning. Taste the broth now and add a pinch of salt only if you used low-sodium broth.
- Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. The vegetables should be soft.
- Turn the slow cooker to HIGH and drop in the broken lasagna sheets. Push them under the liquid and cook for 30 to 45 minutes, stirring once.
- Stir in the red wine vinegar, which brightens the tomatoes. Taste and adjust the salt.
- Grate the mozzarella on a box grater while the noodles cook. Fresh-grated cheese melts smoother than the bagged kind.
- Ladle into bowls and top with a spoonful of ricotta, the mozzarella, Parmesan and basil.
Notes
- Use Italian sausage for part of the beef if you like it spicier. The noodles keep drinking the broth, so add a splash of water when you reheat. Store the soup without the cheese for up to 3 days.
7. Slow Cooker Chicken Cacciatore
Chicken cacciatore is the hunter-style stew that the slow cooker makes almost foolproof. Bone-in thighs stay juicy for the full cook, which is why we pick them over breasts.
Serve it over pasta, polenta or rice. Add the olives or capers only at the end so the flavor stays bright. For a lighter week of dinners, see the healthy crockpot recipes.
6

hoursBone-in chicken thighs braise with bell peppers, mushrooms, tomatoes and Italian seasoning. Olives go in at the end for a salty finish.
Ingredients
8 bone-in, skin-on chicken thighs
Salt and black pepper, to season the chicken
1 green bell pepper, sliced
1 red bell pepper, sliced
1 yellow onion, sliced
8 ounces mushrooms, sliced
3 cloves garlic, minced
1 can (14 ounces) tomato sauce
1 can (14 ounces) diced tomatoes
1/2 cup chicken stock
2 teaspoons Italian seasoning
1/2 teaspoon red pepper flakes
1/4 cup kalamata olives, sliced
Directions
- Season the chicken thighs on both sides with salt and pepper. Slice the peppers, onion and mushrooms with a santoku knife into pieces about the same size.
- Layer the peppers, onion, mushrooms and garlic in the slow cooker. Lay the chicken on top.
- Mix the tomato sauce, diced tomatoes, chicken stock, Italian seasoning and red pepper flakes. Pour the mixture over the chicken.
- Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours. Keep the lid closed.
- Check that the thickest thigh reads 165°F and that the meat pulls from the bone. Move the chicken to a plate.
- Skim any fat from the top of the sauce with a spoon.
- Stir in the olives and cook the sauce for another 15 minutes uncovered. It should look thick enough to coat the chicken.
- Return the chicken to the sauce, spoon the sauce over it and serve.
Notes
- Swap the olives for 1 1/2 tablespoons of capers. Remove the skin before serving if you want a lighter dish. Leftovers keep 3 to 4 days and reheat well.
8. Crock Pot Beef Stew with Hearty Vegetables
This stew gets its mild sweetness from root beer, which tenderizes the beef and rounds out the broth. It is the one to make when you want a stew that tastes rich without a long list of spices.
Chuck is the cut that survives 8 hours because it has the fat and connective tissue to melt into the broth. A lean cut turns dry, as the page on rump roast explains.
8
servings30
minutes8
hoursChuck roast cubes, carrots and potatoes cook slowly in beef stock sweetened with a cup of root beer. A cornstarch slurry thickens the stew at the end.
Ingredients
2 1/2 lb chuck roast, trimmed and cut into 1-inch cubes
3 tablespoons all-purpose flour
1 teaspoon salt, plus about 1 teaspoon more to taste
1/2 teaspoon black pepper
2 tablespoons olive oil
1 cup root beer, any flavor
1 large onion, thinly sliced
1 clove garlic, minced
1 1/2 cups beef stock
2 large carrots, sliced
3 cups diced potatoes
1 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme
2 tablespoons cornstarch, mixed with 2 tablespoons water
Directions
- Whisk the flour, 1 teaspoon of salt and the pepper in a large bowl. Toss the beef cubes in it until each piece is coated.
- Heat the olive oil in a skillet over medium-high heat until it shimmers but does not smoke. Sear the beef in batches, just until each side is browned.
- Put the onion, garlic and root beer in the slow cooker and stir. Add the seared beef.
- Pour the beef stock into the hot skillet and scrape up the browned bits. Let it come to a light boil, add the extra salt and pour it over the beef. Do not stir.
- Tuck the carrots and potatoes around the beef and add the Worcestershire and thyme.
- Cover and cook on LOW for 7 to 8 hours or on HIGH for 4 or more hours. The beef is ready when a cube pulls apart with a fork.
- Stir the cornstarch and water together until smooth. Pour it into the stew and cook uncovered on HIGH for 15 minutes.
- Taste and add salt. The stew should coat the back of a spoon.
Notes
- You can skip the searing for a dump-style stew, but the broth will be paler. Use beef broth in place of the root beer if you prefer. The stew keeps 4 days in the fridge and freezes for 3 months.
9. Vegetable and Lentil Stew with Ham
This is a ham stew, not a meatless one. Ham gives the lentils smoky salt, and a meaty ham bone does the same job if you have one left from a holiday dinner.
If you want a meat-free dinner, skip the ham and use a salty vegetable broth. For lighter week-night meals, see the healthy crockpot recipes.
6

minutesBrown lentils, carrots, celery and diced tomatoes simmer with ham and thyme until the lentils are soft. A hearty bowl that needs no soaking.
Ingredients
2 teaspoons butter
1 onion, diced
3 celery ribs, diced
2 carrots, diced
1 1/2 cups brown lentils, rinsed
6 cups chicken broth
1 can (15 ounces) petite diced tomatoes
1 meaty ham bone or 2 cups diced cooked ham
2 garlic cloves, minced
1 bay leaf
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 tablespoon chopped parsley
Directions
- Melt the butter in a skillet and cook the onion, celery and carrots until softened. Skip this step if you are short on time.
- Rinse the lentils under cold water and pick out any stones. Tip them into the slow cooker.
- Add the cooked vegetables, broth, tomatoes, garlic, bay leaf, pepper and thyme.
- Nestle the ham bone or the diced ham into the liquid.
- Cover and cook on LOW for 7 to 8 hours or on HIGH for 3 to 4 hours. Keep the lid closed, because a lentil stew needs steady heat.
- Lift out the ham bone and the bay leaf. Cut the meat from the bone and return it to the pot.
- Mash a few spoonfuls of lentils against the side of the pot with a spoon to thicken the stew.
- Stir in the parsley and taste for salt. Ham is salty, so add salt only at the end.
Notes
- Chop the vegetables on a big cutting board so the pieces cook evenly. Do not add salt early, because it can keep the lentils firm. The stew keeps 5 days in the fridge and freezes for 3 months.
10. Slow Cooker Guinness Beef Stew
Guinness gives this stew a roasted, slightly bitter edge that balances the sweetness of the carrots. The beer cooks down in the slow cooker, so the finished stew tastes malty, not boozy.
Sear the beef first. The brown crust is what makes the gravy dark. For a similar cut-and-time guide, see beef tips with stew meat vs sirloin.
8

hoursChuck roast cubes, carrots, celery and baby potatoes cook in two cups of Guinness and beef broth. Tomato paste and herbs round out the dark gravy.
Ingredients
2 lb chuck roast, cut into 1-inch cubes
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons olive oil
2 onions, chopped
2 cups Guinness
4 cups beef broth
3 tablespoons tomato paste
1 lb baby potatoes
3 carrots, sliced
3 celery ribs, sliced
1 bay leaf
1/2 teaspoon rosemary
1/2 teaspoon thyme
2 tablespoons cornstarch, mixed with 2 tablespoons water
Directions
- Toss the beef with the flour, salt and pepper until every cube is coated.
- Heat the olive oil in a Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides, then move it to the slow cooker.
- Cook the onions in the same pot until they soften. Stir in the tomato paste and cook for a minute.
- Pour in the Guinness and scrape up the browned bits. Simmer for a few minutes, then pour everything over the beef.
- Add the beef broth, potatoes, carrots, celery, bay leaf, rosemary and thyme.
- Cover and cook on LOW for 7 to 8 hours or on HIGH for 4 to 5 hours. The beef should pull apart with a fork.
- Stir the cornstarch and water together and pour it into the stew. Cook uncovered on HIGH for 15 minutes until the gravy thickens.
- Remove the bay leaf and taste for salt. Serve with crusty bread.
Notes
- Use beef broth with a splash of Worcestershire in place of the beer. The stew is better on day two. It keeps 4 days in the fridge and freezes for 3 months.
11. Slow Cooker Green Bean Casserole with Chicken
The classic Thanksgiving side gets chicken so it can stand as a dinner. This version cooks fast, only 2.5 to 3 hours on low, so it fits the end of a weekday.
Add the cooked chicken in the last 30 minutes so it stays tender. More casseroles for the oven live on our casserole recipes for dinner page.

hoursFrozen green beans bake in cream of mushroom soup with soy sauce, and cooked chicken turns the side dish into dinner. Crispy onions go on top.
Ingredients
8 cups frozen cut green beans
2 cans (21 ounces total) cream of mushroom soup
1 cup milk
2 teaspoons soy sauce
3/4 teaspoon black pepper
1/4 teaspoon seasoned salt
2 cups cooked, chopped chicken
2 cups crispy fried onions, stirred in
1 cup crispy fried onions, toasted for the top
Salt, to taste
Directions
- Put the frozen green beans in the slow cooker. There is no need to thaw them.
- Stir the cream of mushroom soup, milk, soy sauce, pepper and seasoned salt together in a bowl. Pour it over the beans.
- Stir in 2 cups of the fried onions.
- Cover and cook on LOW for 2 1/2 to 3 hours. The beans should be tender but still green.
- Fold in the cooked chicken for the last 30 minutes so it warms through without drying.
- Toast the last cup of fried onions in a dry skillet for a couple of minutes while the casserole finishes. Watch them closely.
- Taste the sauce and add salt if it needs it. Soy sauce and canned soup are salty, so go slowly.
- Scatter the toasted onions over the top just before you serve.
Notes
- Use cooked rotisserie chicken or leftover chicken. Keep leftovers in a glass baking dish with a lid for up to 3 days. The onion topping goes soft, so add fresh at reheating.
12. Crock Pot Chicken Divan with Broccoli
Chicken divan is the retro casserole that the slow cooker handles well, because the sauce protects the chicken from drying out. The curry powder is the small touch that makes it taste different from a plain broccoli bake.
Broccoli goes in near the end if you use fresh, since it turns gray after hours. Frozen broccoli can go in earlier. Looking for a lighter side? Try the healthy crockpot recipes.

minutesCooked chicken and broccoli sit under a sauce of cream of chicken soup, mayonnaise and lemon juice, with a little curry powder. Cheddar melts on top.
Ingredients
2 cups cooked, chopped chicken breasts
1 bunch broccoli, cut into florets (frozen works)
2 cans cream of chicken soup
3/4 cup mayonnaise
1 teaspoon lemon juice
About 1/2 cup grated cheddar cheese
Curry powder, to taste (start with a small pinch)
Salt and black pepper, to taste
Chopped fresh parsley, for garnish
Cooked rice or egg noodles, to serve
Directions
- Cook fresh broccoli until it is just tender or thaw frozen florets. Drain well so the sauce does not turn thin.
- Place the cooked chicken in the bottom of the slow cooker.
- Layer the broccoli over the chicken.
- Stir the cream of chicken soup, mayonnaise, lemon juice and curry powder together in a bowl. Add a little salt and pepper.
- Spread the sauce over the broccoli.
- Cover and cook on LOW for 4 or more hours or on HIGH for 2 or more hours. Keep the lid closed.
- Sprinkle the cheddar on top and cook for about 30 minutes more until it melts and the broccoli is soft.
- Garnish with parsley and spoon over rice or egg noodles.
Notes
- Stir everything gently when serving so the layers mix. Swap the mayonnaise for sour cream if you prefer. Leftovers keep 3 days in the fridge and reheat well in the microwave.
13. Slow Cooker Shepherd’s Pie
Shepherd’s pie is a casserole that benefits from the slow cooker because the filling thickens as it cooks. The mashed potatoes are added late so they stay fluffy and do not turn gray.
The pie is one of many ground beef comfort food recipes on the site. Use a potato ricer to get the mash smooth without gluey lumps.

hoursGround beef, onion and vegetables cook in a thick gravy, and mashed Russet potatoes go on top for the last two hours. A one-pot comfort dinner.
Ingredients
1 lb lean ground beef
1/2 onion, diced
2 teaspoons minced garlic
3 tablespoons all-purpose flour
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
14.5 ounces beef broth
2 cups frozen mixed vegetables
5 large Russet potatoes, peeled and cubed
1/2 cup milk
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
Directions
- Brown the ground beef and onion in a skillet until no pink remains. Drain the fat and stir in the garlic.
- Sprinkle the flour over the beef and stir for a minute. Add the tomato paste, Worcestershire and soy sauce.
- Pour in the beef broth and stir until the gravy looks smooth. Tip everything into the slow cooker with the frozen vegetables.
- Cover and cook on LOW for 3 to 4 hours. The gravy should be thick and bubbling at the edges.
- Boil the potatoes in salted water until they fall apart. Drain them and press them through a potato ricer.
- Mix the riced potatoes with the milk, butter, salt and pepper until fluffy.
- Spread the potatoes over the filling for the last 2 hours of cooking. Put a paper towel under the lid to catch the steam.
- Serve when the potatoes are hot all the way through.
Notes
- Instant mashed potatoes are a shortcut if you are in a rush. Add a handful of cheddar to the top for the last 10 minutes. The pie keeps 3 days in the fridge and reheats well.
14. Chicken Pot Pie Casserole
This casserole gives you the pot pie flavor with biscuits instead of pastry. The potato helps thicken the filling, and the frozen vegetables go in near the end so they keep their color.
Bake the biscuits separately so they stay crisp. For more easy dinners that cook while you work, see 25 lazy high-protein crockpot recipes.

hoursChicken breasts, potato, celery and cream of chicken soup cook into a thick stew, then frozen vegetables and biscuits finish the dish. It tastes like pot pie with no crust to roll.
Ingredients
1 1/2 lb boneless skinless chicken breasts
2 celery stalks, diced
1 onion, diced
1 Russet potato, cut into 1-inch cubes
2 cans (10.5 ounces each) cream of chicken soup
1 cup chicken stock
1 tablespoon dried parsley
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/8 teaspoon sage
1/8 teaspoon black pepper
3 cups frozen mixed vegetables
8 prepared biscuits, baked
Directions
- Put the chicken, celery, onion and potato in the slow cooker.
- Whisk the cream of chicken soup with the stock, parsley, garlic powder, onion powder, thyme, rosemary, sage and pepper. Pour it over the chicken.
- Cover and cook on LOW for 6 or more hours or on HIGH for 3 to 4 hours. The chicken should reach 165°F.
- Move the chicken to a board and shred it with two forks.
- Stir the shredded chicken and the frozen vegetables into the sauce. Cover and cook for about 1 hour more, until the vegetables are hot.
- Bake the biscuits while the vegetables cook, following the package directions. If you cut them into pieces, bake them at 425°F for 11 to 12 minutes.
- Stir the filling with a silicone spatula and scrape the sides so nothing sticks.
- Split the biscuits into bowls and ladle the filling over them.
Notes
- Use frozen peas and carrots if you do not have a mix. Serve the biscuits on the side to keep them crisp. The filling keeps 3 days in the fridge and freezes for 2 months.
15. Crock Pot Tuscan Chicken
Tuscan chicken has the nickname “Marry Me chicken” for good reason. The sauce is simple, and spinach and sun-dried tomatoes make it look like a restaurant dish.
The catch is time. Breasts are ready early, so check them at the shorter end of the range. Thighs can go the full 6 to 8 hours. For another cream-sauce dinner, see beef stroganoff in the crockpot.
4
servings5
minutes4
hoursChicken simmers with garlic and sun-dried tomatoes, and a sauce of cream, Parmesan and Dijon finishes it. Spinach wilts in at the very end.
Ingredients
4 chicken breasts (about 2 lb)
1 teaspoon salt
1 teaspoon black pepper
3/4 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan
1 tablespoon cornstarch
1 teaspoon Dijon mustard
1 teaspoon Italian seasoning
1/2 teaspoon smoked paprika
3 cloves garlic, pressed
1/2 cup sun-dried tomatoes, chopped
1 1/2 cups baby spinach
Directions
- Season the chicken with the salt and pepper and place it in the slow cooker.
- Press the garlic with a garlic press and whisk it with the cream, broth, Parmesan, cornstarch, Dijon, Italian seasoning and paprika.
- Pour the sauce over the chicken and scatter the sun-dried tomatoes on top.
- Cover and cook on LOW for 6 to 8 hours (thighs) or on HIGH for 3 to 4 hours. For breasts, start checking after about 4 hours on LOW.
- Check that the thickest piece reads 165°F.
- Move the chicken to a plate and stir the sauce. If it looks thin, cook it uncovered on HIGH for 10 minutes.
- Stir in the baby spinach in the last 10 minutes until it wilts.
- Return the chicken to the sauce and serve over pasta, rice or mashed potatoes.
Notes
- Chicken thighs are harder to overcook. Use half and half for a lighter sauce, but expect it to be thinner. Leftovers keep 3 days in the fridge.
16. Slow Cooker Tater Tot Casserole
This is the pick for picky eaters. The beef and cheese filling tastes like a cheeseburger, and the tots on top steam soft in the pot.
If you want them crisp, finish the tots under the broiler for a few minutes. Another beef dish with a cream sauce is beef stroganoff.
6

hoursGround beef, corn and a creamy mushroom soup sauce cook under a blanket of frozen tater tots. Cheddar melts on top for the last 10 minutes.
Ingredients
1 lb ground beef
1 onion, diced
12 ounces frozen corn
10.5 ounces cream of mushroom soup
1/2 cup milk
1/4 cup sour cream
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
20 ounces frozen tater tots
1 1/2 cups shredded cheddar
Directions
- Brown the ground beef and onion in a skillet until no pink remains, then drain the fat.
- Line the slow cooker with a slow cooker liner for easy cleanup. Spread the beef and onion in the bottom.
- Stir the corn into the beef.
- Whisk the soup, milk, sour cream, Worcestershire, garlic powder, salt and pepper together. Pour it over the beef.
- Arrange the frozen tater tots in a single layer on top. Do not stir them in.
- Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours. Put a paper towel under the lid to catch the steam.
- Sprinkle the cheddar over the tots and cook for 10 more minutes with the lid on, until it melts.
- For crisper tots, broil them for a few minutes after cooking. Watch them closely.
Notes
- Use cream of chicken soup if you prefer. Green beans work in place of corn. Leftovers keep 3 days in the fridge.
17. Chicken and Stuffing Casserole
Chicken and stuffing is the easiest way to get Thanksgiving flavor on a Tuesday. The stuffing steams on top of the chicken and soaks up the creamy sauce below.
Use a slow cooker that is not too big, because a half-full pot cooks too fast. This works well in a 6-quart cooker. Looking for more casserole ideas? Try the casserole recipes for dinner.

1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups frozen mixed vegetables
1 box (6 ounces) stuffing mix
10.5 ounces cream of chicken soup
1 cup chicken broth
1/2 cup milk
Directions
- Season the chicken with the garlic powder, onion powder, salt and pepper. Lay it in the bottom of the 6 quart slow cooker.
- Scatter the frozen mixed vegetables over the chicken.
- Whisk the cream of chicken soup, broth and milk together until smooth. Pour it over the vegetables.
- Sprinkle the dry stuffing mix evenly on top. Do not stir.
- Cover and cook on LOW for about 6 hours or on HIGH for 3 to 4 hours. Do not lift the lid.
- Check that the chicken reads 165°F in the thickest part. The stuffing should be soft and moist.
- Fluff the stuffing with a fork and let it sit for 5 minutes.
- Serve scoops of chicken, stuffing and vegetables together.
Notes
- Add sour cream to the sauce if you like it tangier. Leftovers keep 3 days in the fridge. Reheat with a splash of broth.
18. Pot Roast with Gravy and Veggies
A pot roast is the cut-and-time lesson of the page. A chuck roast has enough fat and connective tissue to stay moist for 8 hours, so it is the cut we pick.
Make the gravy from the drippings and the roast tastes like Sunday dinner. The same roast is the base for Mississippi pot roast and for roast beef crock pot recipes.
8
servings10
minutes9
hoursA chuck roast simmers all day with carrots, celery and a savory broth until it shreds, then drippings become a thick brown gravy.
Ingredients
4 lb chuck pot roast
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic salt
1 onion, quartered
1 lb baby carrots
3 celery stalks, cut into chunks
3 garlic cloves, minced
2 cups beef broth
3 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 tablespoon soy sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
4 tablespoons butter, for the gravy
3 tablespoons all-purpose flour, for the gravy
3 cups pan drippings, for the gravy
Directions
- Pat the roast dry and rub it with the salt, pepper and garlic salt. Sear it in the olive oil in a skillet until browned on all sides.
- Put the onion, carrots, celery and garlic in the slow cooker. Set the roast on top.
- Whisk the beef broth, Worcestershire, balsamic vinegar, soy sauce, thyme and rosemary. Pour it around the roast.
- Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours. Keep the lid closed.
- The roast is done when it pulls apart with a fork. Move it and the vegetables to a platter.
- Pour the drippings through a fat separator and measure 3 cups of the liquid. Top up with broth if you are short.
- Melt the butter in a saucepan and whisk in the flour. Cook for a minute, then whisk in the drippings.
- Simmer for 4 to 5 minutes until the gravy thickens. Taste and add salt.
Notes
- Add baby potatoes in the last 4 hours if you want a one-pot dinner. Leftovers make great sandwiches. The roast keeps 4 days in the fridge and freezes for 3 months in its gravy.
19. BBQ Pulled Pork Sandwiches
Pork shoulder is forgiving: it has so much fat that it cannot dry out in 8 hours. The only thing that goes wrong is lifting the lid too often.
The meat is done at 200°F, and that is when it shreds with almost no effort. For another sandwich on the same idea, see Italian beef sandwiches.
8

minutes8
hoursA pork shoulder cooks in broth, cider vinegar and Italian seasoning until it shreds, then BBQ sauce is stirred through. Pile it on buns.
Ingredients
3 lb boneless pork shoulder
1 tablespoon Italian seasoning
1 tablespoon garlic salt
1/2 cup BBQ sauce
1/4 cup apple cider vinegar
1/4 cup chicken broth
Hamburger buns, to serve
Extra BBQ sauce, for the table
Coleslaw, optional topping
Pickle slices, optional topping
Directions
- Rub the pork shoulder with the Italian seasoning and garlic salt on all sides.
- Put the pork in the slow cooker and pour the apple cider vinegar and chicken broth around it.
- Cover and cook on LOW for 8 or more hours or on HIGH for 5 to 6 hours. Do not open the lid in the first hours.
- Check the temperature. The pork is ready at 200°F in the center.
- Move the pork to a board and let it rest for 30 to 60 minutes. This keeps the juices in the meat.
- Shred the pork with meat shredder claws, discarding the large pieces of fat.
- Return the shredded pork to the slow cooker and stir in the BBQ sauce. Warm it through for 15 to 20 minutes.
- Pile the pork on buns and top with coleslaw and pickles.
Notes
- Use pineapple juice in place of the broth for a sweeter flavor. Keep extra pork juices to moisten leftovers. The pork keeps 4 days in the fridge and freezes for 3 months.
20. Honey Garlic Chicken Thighs
Honey garlic chicken is the fastest recipe on the page to assemble. Five ingredients go in the pot, and a spoonful of cornstarch turns the juices into a glaze.
Choose thighs. Breasts dry out with the long cook time, and thighs stay juicy. Serve with rice and broccoli. If you like pork instead, see the crockpot pork chops.
6

hoursBoneless chicken thighs cook in soy sauce, honey, garlic and lime until the sauce turns glossy. Rice soaks up the extra sauce.
Ingredients
2 lb boneless skinless chicken thighs
1/3 cup soy sauce
1/3 cup honey
4 garlic cloves, minced
2 tablespoons lime juice
1 tablespoon cornstarch, mixed with a little cold water
Sliced green onion, for garnish
Hot sauce, optional
Cooked rice, to serve
Steamed broccoli, to serve
Directions
- Whisk the soy sauce, honey, garlic and lime juice together in a bowl.
- Place the chicken thighs in the slow cooker and pour the sauce over them.
- Cover and cook on LOW for 4 to 6 hours or on HIGH for 2 to 4 hours. Do not open the lid in the first 2 hours.
- Check with an instant read thermometer. The thickest thigh should read 165°F.
- Move the chicken to a plate. Skim any fat off the sauce.
- Stir the cornstarch and cold water until smooth and pour it into the sauce. Cook on HIGH for 10 to 15 minutes until it turns glossy.
- Return the chicken to the sauce and turn it to coat.
- Spoon over rice with broccoli and top with green onion and hot sauce.
Notes
- Use chicken breast if that is what you have, but cook it for the shorter time. Leftovers keep 3 days in the fridge. The cooked chicken freezes for 2 months.
21. Salisbury Steak with Mushroom Gravy
Salisbury steak is a patty, not a steak. Ground beef mixed with panko and an egg yolk stays tender in gravy, so the dish is a good pick when you are worried about dry meat.
Brown the patties first, because the crust holds them together in the sauce. Our crockpot steak bites page shows another quick-cooking beef idea.
6
servings10
minutes5
hoursBrowned beef patties simmer in a gravy of mushrooms, onion and beef broth. A cornstarch slurry thickens it right before serving.
Ingredients
6 ounces mushrooms, sliced
1/2 medium yellow onion, sliced
1 1/2 cups beef broth
1 ounce brown gravy mix (1 packet)
2 tablespoons ketchup
1 teaspoon Dijon mustard
2 tablespoons chopped fresh parsley
2 tablespoons cornstarch
4 tablespoons water
1 1/2 lb lean ground beef
1 egg yolk
1/4 cup minced onion
1/3 cup panko bread crumbs
3 tablespoons milk
1 clove garlic, minced
3/4 teaspoon salt
1/4 teaspoon black pepper
Directions
- Put the mushrooms and sliced onion in the bottom of the slow cooker.
- Mix the ground beef, egg yolk, minced onion, panko, milk, garlic, salt and pepper. Mix gently, because overworking makes patties tough.
- Shape 6 patties. Brown them in a cast iron skillet over medium-high heat for about 3 minutes per side.
- Lay the patties over the mushrooms.
- Whisk the beef broth, gravy mix, ketchup, Dijon and parsley. Pour it over the patties.
- Cover and cook on LOW for 3 to 5 hours, until the patties reach 160°F.
- Move the patties to a plate. Turn the slow cooker to HIGH.
- Stir the water and cornstarch together and pour it into the gravy. Cook for a few minutes until thick, then return the patties to the sauce.
- Serve over mashed potatoes or rice.
Notes
- Cooking longer than 5 hours makes the patties crumble. Leftovers keep 3 days in the fridge. Freeze the patties in gravy for up to 2 months.
22. Braised Short Ribs with Red Wine Sauce
Short ribs are a rich cut that melts into tenderness after 7 hours. They give a restaurant-style dinner for very little hands-on work.
The catch is fat. Skim the sauce and reduce it on the stove, or the dish tastes greasy. Read about short ribs in the slow cooker to see how bone-in and boneless differ.
6

hoursBone-in short ribs braise in beef stock and red wine with carrots, celery and herbs until the meat falls from the bone. The sauce is reduced for a glossy finish.
Ingredients
6 to 8 bone-in beef short ribs (3 1/2 to 4 lb)
1/4 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons oil
1 onion, chopped
2 cups beef stock
1 cup dry red wine
3 carrots, chopped
2 celery ribs, chopped
3 garlic cloves, minced
2 tablespoons soy sauce
1 tablespoon tomato paste
1 teaspoon rosemary
1/2 teaspoon thyme
2 bay leaves
2 1/2 tablespoons cornstarch
Directions
- Season the ribs with the salt and pepper. Brown them in hot oil for 3 to 4 minutes per side.
- Put the onion, carrots, celery and garlic in the slow cooker. Lay the ribs on top.
- Whisk the beef stock, red wine, soy sauce and tomato paste. Pour it over the ribs and add the rosemary, thyme and bay leaves.
- Cover and cook on LOW for 7 to 8 hours. The meat should pull from the bone with a fork.
- Probe the thickest rib with a Typhur thermometer. The probe should slide in with almost no resistance.
- Move the ribs to a plate and cover them with foil.
- Strain the liquid into a saucepan and skim off the fat. Simmer for 5 to 10 minutes.
- Whisk the cornstarch with a little cold water and stir it into the sauce until glossy. Serve the ribs with the sauce.
Notes
- Use beef broth with a splash of vinegar if you skip the wine. Make the ribs a day ahead and chill, which makes the fat easier to remove. Leftovers keep 4 days in the fridge.
23. Slow Cooker Swedish Meatballs
Swedish meatballs are the lowest-effort recipe on the page. Frozen meatballs go straight into the pot, so there is nothing to roll, and the sauce does the work.
Sour cream and half and half go in at the end so the sauce stays smooth. This recipe also fits a small cooker, which is handy for easy meals for one or two. For homemade meatballs, see crockpot meatballs.
6
servings5
minutes4
hoursFrozen meatballs simmer in a creamy gravy of beef broth, mushroom soup, half and half and sour cream. Egg noodles soak up the sauce.
Ingredients
32 ounces frozen meatballs
1 1/2 cups beef broth
1 can cream of mushroom soup
1/2 cup half and half
1/2 cup sour cream
2 tablespoons cornstarch
2 tablespoons Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Chopped parsley, for garnish
Egg noodles, to serve
Directions
- Whisk the beef broth, cream of mushroom soup, cornstarch, Worcestershire and all the seasonings in a bowl until no lumps remain.
- Put the frozen meatballs in the slow cooker. A small cooker such as the Elite Gourmet 1.5 quart slow cooker works for a half batch.
- Pour the sauce over the meatballs and stir once to coat them.
- Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 5 hours.
- The meatballs should be hot all the way through, with the sauce thick enough to coat a spoon.
- Whisk the half and half and the sour cream together in a small bowl, then stir them into the sauce. Cook for 10 more minutes without boiling.
- Cook the egg noodles according to the package while the sauce finishes.
- Spoon the meatballs and sauce over the noodles and scatter parsley on top.
Notes
- Mashed potatoes are good in place of noodles. If the sauce looks thin, cook it uncovered for 15 minutes. The meatballs keep 3 days in the fridge.
24. Turkey Breast with Herb Gravy
A turkey breast is the answer when a whole bird is too much. The slow cooker keeps the meat moist, but the skin comes out pale, so a short broil at the end gives it color.
Use a thermometer, because turkey breast goes from juicy to dry fast. For other holiday-style mains, see the Instant Pot recipes.
6
servings15
minutes7
hoursA bone-in turkey breast cooks on celery and onions with butter and herbs until it hits 165°F. The drippings turn into a savory gravy.
Ingredients
4 to 5 lb bone-in turkey breast
4 celery stalks, cut into chunks
2 onions, quartered
5 thyme sprigs
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 teaspoon smoked paprika
1 teaspoon seasoned salt
1/2 teaspoon black pepper
4 tablespoons softened butter
2 cups broth, for the gravy
4 tablespoons butter, for the gravy
4 tablespoons all-purpose flour, for the gravy
1 teaspoon salt, for the gravy
1/2 teaspoon black pepper, for the gravy
Directions
- Spread the celery, onions and thyme in the bottom of the slow cooker.
- Mix the garlic powder, onion powder, paprika, seasoned salt and pepper into the softened butter.
- Rub the herb butter over the turkey, and under the skin if you can.
- Set the turkey on the vegetables. Cover and cook on LOW for 6 to 7 hours, until the thickest part reads 165°F.
- Rest the turkey for 20 minutes. Broil it for 3 to 5 minutes to crisp the skin, watching closely.
- Strain the drippings. Melt the butter in a saucepan, whisk in the flour and cook for a minute.
- Whisk in the broth and about a cup of the drippings. Simmer until thick, then season with salt and pepper.
- Smooth the gravy with an immersion blender if there are lumps, then carve the turkey and serve.
Notes
- Use turkey broth if you have it. Slice leftover turkey thin for sandwiches. The turkey keeps 3 days in the fridge and freezes for 2 months.
25. Slow Cooker Mac and Cheese
Mac and cheese is the fastest recipe on the page, at about 2 hours, and the most watch-worthy. Macaroni cooks quickly in a slow cooker and can turn gummy.
Boil the macaroni for only 6 minutes first, then stir every 30 minutes. This is a side dish on the casserole recipes for dinner table too.
8
servings15
minutes2
hoursMacaroni, sharp cheddar, sour cream and cheddar soup melt into a creamy sauce. Slow cooking keeps it smooth.
Ingredients
2 cups elbow macaroni
4 tablespoons butter, cubed
2 1/2 cups sharp cheddar cheese, shredded
1/2 cup sour cream
10.5 ounces cheddar cheese soup
1/2 teaspoon salt
1 cup milk
1/2 teaspoon dry mustard
1/2 teaspoon black pepper
Extra shredded cheddar, for the top
Directions
- Boil the macaroni for 6 minutes in salted water. It will cook the rest of the way in the pot, so drain it while it is still firm.
- Measure the ingredients with measuring cups and spoons, because the sauce is sensitive to too much milk.
- Put the hot macaroni in the slow cooker with the butter and stir until the butter melts.
- Add the cheddar, sour cream, cheddar soup, salt, milk, dry mustard and pepper. Stir to combine.
- Cover and cook on LOW for 2 to 2 1/2 hours. Stir every 30 minutes so the edges do not scorch.
- The mac and cheese is done when the macaroni is tender and the sauce is creamy. It thickens as it sits.
- Stir in a splash of milk if it looks stiff.
- Sprinkle the extra cheddar on top and let it melt for 5 minutes before serving.
Notes
- Do not cook it longer than the time given, as the pasta turns mushy. Leftovers keep 3 days in the fridge. Reheat with a splash of milk.
26. Crock Pot Creamed Corn
Creamed corn is the best Thanksgiving side to hand to the slow cooker, because it frees the stove. The cream cheese melts into the corn with no stirring.
Add the cheese last and do not overcook, or the corn gets watery. A topping of crumbled bacon adds crunch. For a starch side, see crockpot potatoes.
8
servings15

hoursFrozen corn cooks with butter, cream cheese, milk and a jalapeno into a thick, sweet side. Cheddar melts in at the end.
Ingredients
1/4 cup butter, cubed
1 jalapeno, seeded and diced
2 lb frozen corn
1/2 cup milk
4 ounces cream cheese, cubed
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 cup shredded cheddar
Crumbled cooked bacon, for the top
Directions
- Put the butter, jalapeno and frozen corn in the slow cooker. Stir to mix.
- Pour in the milk and scatter the cream cheese cubes on top.
- Add the salt, pepper and garlic powder.
- Cover and cook on LOW for 3 to 4 hours, or on HIGH for 2 to 3 hours.
- Stir the corn once halfway through to help the cream cheese melt.
- Stir in the cheddar at the end and cover for 10 minutes until it melts.
- Snip the cooked bacon into small bits with kitchen shears and sprinkle it on top.
- Taste and adjust the salt before serving.
Notes
- Skip the jalapeno for a milder dish. Leftovers keep 4 days in the fridge. Reheat with a splash of milk.
27. Crock Pot Cinnamon Apples
Cinnamon apples are the easy dessert that makes the house smell like fall. A cornstarch slurry thickens the juices into a syrup.
Use firm apples so they hold their shape. Soft ones turn into applesauce. Serve them next to the roast beef for a full dinner.
8
servings10
minutes4
hoursSliced apples cook down in brown sugar, cinnamon and butter into a soft, syrupy dessert. Serve them over ice cream or oatmeal.
Ingredients
3 lb apples (about 6), peeled, cored and sliced
1/3 cup brown sugar
1/3 cup sugar
2 teaspoons cinnamon
1/4 teaspoon kosher salt
1 teaspoon vanilla bean paste
2 tablespoons cornstarch
2 tablespoons butter, cubed
Vanilla ice cream or Greek yogurt, to serve
Chopped pecans, optional topping
Directions
- Peel, core and slice the apples. Put them in the slow cooker.
- Mix the brown sugar, sugar, cinnamon and salt in a bowl.
- Toss the apples with the sugar mixture and the vanilla bean paste.
- Sprinkle the cornstarch over the apples and toss once more.
- Dot the butter on top.
- Cover and cook on LOW for 4 hours or on HIGH for 2 hours.
- The apples should be tender when pierced with a fork, but not falling apart.
- Stir gently and let the syrup rest for 10 minutes to thicken.
Notes
- Store leftovers in deli containers for up to 5 days in the fridge. Reheat in the microwave. Swap half the sugar for maple syrup if you like.
28. Crock Pot Butternut Squash Soup
This is the lightest soup on the page and the only one with no meat. Apple gives sweetness and a splash of cider vinegar at the end keeps it from tasting flat.
The squash is the thickener, so no flour is needed. Blend until smooth and freeze a few portions, which makes it one of the best easy meals for one to keep in the freezer.
6

hoursButternut squash, carrot and apple cook in stock until soft, then the soup is blended with coconut milk. Cinnamon and turmeric warm it.
Ingredients
1 onion, chopped
2 cups chopped carrot
2 cups chopped apple
6 cups cubed butternut squash
2 garlic cloves, minced
2 teaspoons kosher salt
1/2 teaspoon turmeric
1 teaspoon cinnamon
1 quart vegetable or chicken stock
1 cup coconut milk
1 tablespoon apple cider vinegar
Directions
- Put the onion, carrot, apple, squash and garlic in the slow cooker.
- Sprinkle the salt, turmeric and cinnamon over the vegetables.
- Pour in the stock. The liquid should just cover the vegetables.
- Cover and cook on LOW for 6 to 7 hours or on HIGH for 4 to 5 hours.
- The squash is ready when it mashes at the touch of a spoon.
- Blend the soup with an immersion blender or in batches in a countertop blender. Vent the lid so steam can escape.
- Stir in the coconut milk and cider vinegar. Warm for 10 minutes.
- Taste and add salt.
Notes
- Freeze single portions in Souper Cubes for lunches. Swap cream for the coconut milk. The soup keeps 5 days in the fridge and freezes for 3 months.
What are easy crockpot recipes?
Easy crockpot recipes are dinners where raw or lightly browned ingredients go into the slow cooker in the morning and come out finished at night. They are the most popular easy meals for dinner on a busy week, because the pot does the work for 4 to 10 hours. The ones on this page are comfort food recipes: creamy soups, cheesy casseroles, pot roast and warm sides.
Not every comfort food dinner suits a slow cooker. Lean cuts dry out and noodles turn soft, so each card gives hours for both LOW and HIGH and says when to add the delicate parts. For more beef ideas, read ground beef comfort food recipes that do not all taste the same.
How do you choose easy fall crockpot meals?
- Which cut holds 8 hours: chicken thighs, chuck roast, pork shoulder and short ribs have fat and connective tissue, so they stay tender. Lean breast, round and sirloin need the short end of the range. This is the first thing to check for easy fall meals that cook while you are out.
- How much liquid: a slow cooker traps steam, so soups and stews need the full amount in the card, while roasts and chicken need only enough broth to cover the bottom.
- What to add at the end: cream, cheese, sour cream, noodles and fresh herbs go in during the last 10 to 30 minutes, or they split, go soft or lose their flavor.
How to Make Easy Crockpot Meals: the Base Method
Brown, layer and add the liquid
Brown the meat in a skillet when the card says so, then put the vegetables on the bottom and the meat on top. The crust adds flavor that the pot cannot make alone, as in this chuck roast method.
Keep the lid closed
Every time you lift the lid, steam and heat escape and the dinner takes longer. Leaner cuts need even more care, as the rump roast crock pot recipes show.
Add dairy, noodles and thickener at the end
Stir in cream cheese, milk and sour cream near the finish, cook pasta separately or in the last hour, and thicken with cornstarch mixed with cold water. The page on crockpot pasta recipes with ground beef explains the timing.
When fall crockpot recipes go wrong
- Dry meat: the cut was too lean or cooked too long. Slice it against the grain and moisten it with the cooking juices.
- Watery sauce: the lid trapped steam. Cook it uncovered on HIGH for 15 to 30 minutes or stir in cornstarch mixed with cold water.
- Mushy noodles or rice: they went in too early. Add pasta in the last hour or cook it separately.
- Split dairy: cream or sour cream was added at the start. Whisk it with a ladle of hot liquid and stir it in at the end, without boiling.
- Bland dinner: slow cooking mutes flavor. Finish with salt, a squeeze of lemon or a spoonful of vinegar, and fresh herbs.
How to Store and Freeze Crockpot Leftovers
Cool leftovers within 2 hours and keep them in the fridge for 3 to 4 days in a shallow, covered container. Soups, stews and pot roast with gravy freeze well for about 2 to 3 months, while creamy pasta and potato dishes can turn grainy, so freeze those only if you must. Reheat until steaming hot. Key takeaways
- Pick chicken thighs, chuck or pork shoulder when the pot will run for 8 hours.
- Check the hours on the card for your cooker, and use the shorter time for lean cuts.
- Keep the lid closed until the last hour.
- Add cream, cheese, sour cream and noodles at the end.
- Check poultry at 165°F and ground beef at 160°F before serving.
- Cool leftovers within 2 hours and freeze soups and stews, not creamy pasta.
When the free version isn’t enough
A recipe gives you the order of steps, but it cannot tell you whether your cooker runs hot or your roast is done. A probe or instant-read thermometer settles that in seconds, and a slow cooker liner makes cleanup quick. Both are used in the recipes above where they help most.
Common questions
What are the easiest crockpot recipes for beginners?
The creamy chicken and wild rice soup (1), the honey garlic chicken thighs (20) and the Swedish meatballs (23) are the easiest. They need few ingredients, little prep and almost no watching, which makes them easy meals for a first week with a slow cooker.
What are the best comfort food dinners for a slow cooker?
Pot roast (18), loaded baked potato soup (3), shepherd’s pie (13) and mac and cheese (25) are the classic comfort foods on this page. They give easy comfort food that tastes slow-cooked without hours at the stove.
How do you make chicken cacciatore in a crockpot?
Put chicken, peppers, onion, mushrooms and a tomato sauce in the pot and cook on LOW. The slow cooker chicken cacciatore (7) gives the amounts and hours, and it is ready when the chicken reads 165°F.
Can you make easy meals for one in a crockpot?
Yes. Halve a recipe such as the Swedish meatballs (23) and use a small 1.5 quart cooker, then freeze the extra portions. A half-full large pot cooks faster, so check it earlier.
How long do crockpot recipes take on LOW and HIGH?
Most dinners here take 4 to 8 hours on LOW, and the HIGH setting needs about half the time. Each card lists both, and roasts and ribs are the ones that need the longest.
How do you keep chicken from drying out in a slow cooker?
Use boneless thighs, keep the lid closed and stop at 165°F. Breasts need the shorter time on the card, because lean meat turns stringy when it cooks too long.
Can you cook frozen meat in a crockpot?
Thaw raw meat in the fridge first, because frozen meat stays too long in the unsafe temperature range. Pre-cooked frozen items, such as the meatballs in item 23, go in straight from the freezer.
